| No-bake Chewy Cookie Bars |
What I used:
- 8 packs chocolate-filled cookies
- 1 1/2 bags chocolate & vanilla flavored marshmallows
- 2 1/2 tablespoons unsalted butter
What I did:
- Line a 4x8 container with aluminum foil, allowing the foil to hang over the edges, and set aside.
- Place cookies in a plastic bag and crush into
pulpdesired level of crumbly-ness (is there such term?). - Put the butter and marshmallows in a large microwave-safe container and heat for about 1 1/2 minutes or until the marshmallows become puffy. Be sure to use a large container to accommodate the marshmallows when then expand to twice their size.
- Remove and pour in ground cookies. Mix until the cookies are evenly distributed (this is gonna be a delicious, gooey mess), then transfer to the foil-lined container. Let cool for about 15 minutes then cut into bars and enjoy!
Some notes:
- This is based on Bakergirl's Chewy No-Bake Cookies & Cream Treats. I just substituted local ingredients I found at the supermarket and downsized the portions to fit the container I had on hand.
- You can use any other type of cookies (chocolate chip cookies, anyone?) instead of what I used here. I originally intended to use Oreos as indicated in the recipe, but I figured they're a bit expensive to be experimented upon (and possibly scrapped) so I went for Cream-O for the meantime.
- If you want to make your life easier, you can use a food processor to crush the cookies.
- To make the bars softer and more chewy, just decrease the amount of cookies.
